It really depends on what dish you are cooking. For hot soups, I’d add lime juice just before serving (after you have turned off the heat). Heating lime juice can cause it to turn bitter.
In fresh salads, this shouldn’t be a problem and it can be added at the same time as the fish sauce. I’d recommend that you pre-mix the salad dressing made with fish sauce, lime juice, palm sugar, and some chillies first. Keep the salad mix separate from the dressing, then add just before you serve so the dish stays fresh!
